Spicy Almond Butter, Apple and Rice Salad

I absolutely love this recipe, as do many of my clients, because of the sweet and savory combination. Not to mention the little kick with the cayenne. It is a great dish to get your digestion moving!
  • 1 cup cooked short grain brown rice
  • 1/2 cup chopped Almonds
  • Coconut Aminos or soy sauce
  • 1 tblsp almond butter
  • Spinach, sliced thinly
  • Smoked salt
  • 1 apple, chopped
  • pinch Cayenne pepper
  • 1 pinch pepper

Bring 2 cups of water to boil. Add brown rice and set to a simmer for 45 minutes.  Remove from heat and let cool for 20 minutes. Put in a bowl and add apple, spinach, and almonds. Set aside. Mix soy sauce, almond butter,cayenne pepper and smoked salt.  Add 1 tblsp water if create a thinner consistency, more if needed.   Pour over bowl of rice mixture. Enjoy!
